Monkey muffins

Ingredients:

2 1/2 cups flour

3 Tbsp sugar

​Pinch of salt

1 Tbsp baking powder

1/2 cup Becel margarine

1 cup of buttermilk

1 tsp vanilla

Topping:

1 cup brown sugar

1 Tbsp cinnamon

1/2 cup Becel margarine, melted

Preheat oven to 350*F. Mix the flour, sugar, salt and baking powder. Add in the margarine and mix until it resembles crumbs.​ Pour in the buttermilk and vanilla and mix until combined. Don’t over mix. Combine topping ingredients in a separate bowl.  Take muffin mix and make small little balls and roll in topping mix. Place in greased muffin pan (3 balls per muffin). Instead of 3 mini balls, you can roll 2 larger ones. Bake for 25-30 mins.

Blueberry muffin

Blueberry muffin

Just in time for blueberry season. Great for breakfast on the go.

Ingredients:
2 cups flour
1/2 cup sugar
3 tsp baking powder
Pinch of salt
3/4 cup milk
1/3 cup Bertolli oil
1 egg
1 cup blueberries

Preheat oven to 350*F. ​Mix flour, sugar, powder and salt. Slowly add milk and oil then egg. Mix until dry ingredients are moistened. Fold in blueberries. Fill muffin cups or greased pan 3/4 full. Bake 20-25 minutes until toothpick comes clean.
