I used 2 whole oranges (peeled) instead of orange juice and strained the pulp after blending.

Ingredients:

1 banana

1 cup orange juice

1 tsp vanilla

1/4 cup yogurt

2 tsp orange zest

1 cup ice​​​

Blend all ingredients in blender until smooth and pour into glasses. You can use frozen fruit instead of ice.

Open faced salmon sandwich

Great use of your leftover salmon or you can use canned. Tastes good on toasted bread too.

Ingredients:

Cooked salmon

1/2 onion, chopped

1 tsp Litehouse dill, and some for decoration

2 Tbsp mayonnaise‎ 

Pinch of salt
Pinch of pepper

​Arugula salad mix

French bread or baguette

Mix salmon, onion, dill mayo, salt and pepper. Spread salad on bread and add salmon mix. Sprinkle with dill.

Great use of your leftover chicken. Tastes good on toasted bread too.

Ingredients:

Cooked chicken

​2 Tbsp mayonnaise‎ 

Pinch of salt
Pinch of pepper

​Arugula salad mix

French bread or baguette

Mix chicken, mayo, salt and pepper. Spread salad on bread and add chicken mix. I used leftover teriyaki chicken.

No bake energy bites

These are  a great snack if you are going for a hike.

Ingredients:

1/2 cup peanut butter

1/3 cup honey

1 tsp vanilla

1 cup oatmeal

1 cup coconut

1/4 cup flax seeds

1/2 cup chocolate chips

Mix peanut butter, honey and vanilla together. Add in oatmeal, coconut, flax and chocolate chips. Chill in fridge for an hour. Roll into balls and keep in fridge for up to 1 week.

Mushroom quinoa

Ingredients

2 cup water

1 cup quinoa

1/2 pkg of bacon

1 Tbsp Bertolli Extra Virgin olive oil

1 cup mushrooms, thinly sliced

2 cloves of Litehouse garlic

1/2 tsp Litehouse thyme

Pinch of salt

Pinch of pepper

Boil the water and add quinoa. Cook according to package. Take half a package of bacon and cut into small strips. Add olive oil and garlic when bacon is almost done. Cook until done. Add mushrooms (I used Shiitake), thyme, salt and pepper. Then add quinoa. Stir until everything is mixed.

Monkey muffins

Ingredients:

2 1/2 cups flour

3 Tbsp sugar

​Pinch of salt

1 Tbsp baking powder

1/2 cup Becel margarine

1 cup of buttermilk

1 tsp vanilla

Topping:

1 cup brown sugar

1 Tbsp cinnamon

1/2 cup Becel margarine, melted

Preheat oven to 350*F. Mix the flour, sugar, salt and baking powder. Add in the margarine and mix until it resembles crumbs.​ Pour in the buttermilk and vanilla and mix until combined. Don’t over mix. Combine topping ingredients in a separate bowl.  Take muffin mix and make small little balls and roll in topping mix. Place in greased muffin pan (3 balls per muffin). Instead of 3 mini balls, you can roll 2 larger ones. Bake for 25-30 mins.

Maple french toast

Add a touch of flavor to your French toast. So good they will come back for more

Ingredients:

6 Slices of bread

2 eggs

1/4 milk or cream

1 Tbsp maple syrup

pinch of salt & pepper

1 Tbsp maple syrup for topping

1 Tbsp icing sugar​

Mix eggs, milk, syrup, salt and pepper. Dip bread in mixture (both sides). Fry until golden brown on each side. Top with icing sugar and maple syrup.

Mango strawberry kiwi smoothie

Ingredients:

1 mango

1 cup of strawberries

1 kiwi

1 cup of ice
2 Tbsp yogurt

1/2 cup water

​Blend all ingredients in blender until smooth and pour into glasses.  You can use frozen fruit instead of ice.

Honey garlic chicken

Fall off the bone honey garlic chicken.

You can use it for sandwiches, soup or just it by itself.

Ingredients:
Whole chicken
1 tsp Litehouse garlic
1 tsp Litehouse poultry spice
Pinch of salt
​Pinch of pepper
1/2 cup honey

Preheat oven to 350*F. If you use a crock pot, add 1/2 cup of water. Mix all ingredients and rub all over chicken. Cook according to size of chicken. I cooked mine in a crock pot for 4 hours on high then 4 hours on low.
